Let’s Cut the Curds!

With Kati Davenport

Class Information

Class Descripton

In this class, we’ll create beautiful jars filled with infused olive oil and Labneh, then we’ll whip up a fresh batch of mozzarella to share! Labneh, a yogurt superfood, is a yogurt cream cheese that is a Middle Eastern tradition. Nomadic tribes traveling the Judean deserts preserved their goat’s milk by making it into Labneh, rolling it into balls, and storing it in jars with olive oil and herbs.

This cheese is high in protein and full of all the good stuff yogurt offers. We’ll work together to make beautiful Jewel Box Labneh Balls for snacking in class!

After we’ve made our Labneh, we’ll try our hand at homemade mozzarella! It’s actually relatively quick and easy. We’ll heat our milk, watch the curds form, and then stretch, stretch, stretch them like taffy!

I mean, who doesn’t love fresh mozzarella?!?

Then it’ll be time to snack! We’ll make about 1 lb. of fresh cheese per person — enough to enjoy in class and share.
